Breakfast Cookies

3 cups rolled oats

1 can pumpkin puree

1/2 cup chocolate chips

1/4 cup maple syrup

1 tsp vanilla extract

1 TBSP Spice by Rachel Sweet PUMPKIN PIE SPICE MIX



Preheat oven to 350 degrees F and line a baking sheet with parchment paper.


While the oven heats up, combine all ingredients into a large bowl and mix well. Use your hands to form thick pancakes about 1/2 inch thick and place them about 1 inch apart on the baking sheet.


Bake 12 minutes in the heated oven or until a toothpick inserted into a cookie comes out clean. Allow to cool for 5 minutes before tasting!
