Burst of Flavor Beef Tenderloin

2-3 pound beef tenderloin

2 TBSP oil (olive or vegetable)

2-4 TBSP butter

1-2 TBSP Spice by Rachel Sweet ONION SOUP MIX



Remove the meat from the fridge and season all sides with ONION SOUP MIX. Depending on the size of your cut, you may need more spice. Allow the seasoned meat to sit for 30 minutes at room temperature. This helps it to cook more evenly.


Preheat oven to 450 degrees F. Heat a large skillet or pan with 2 TBSP oil on medium high. When the oil is hot, put the entire tenderloin in it and cook 2 to 3 minutes on each side. This is to sear the outside to develop a nice outer crust - not to cook the meat through yet!


Place the seared tenderloin onto a glass baking dish and smear the 2-4 TBSP butter over the top. Put the meat into the preheated oven uncovered and bake 25 to 35 minutes. Take the baking dish out of the oven and insert a meat thermometer into the thickest part of the meat.


Rare (120-125 degrees F)

Medium-Rare (130-135 degrees F)

Medium (135-140 degrees F)

Medium-Well (140-145 degrees F)

Well-Done (150 degrees F)


When the meat is cooked to temperature, remove it from the oven and let it rest in the baking dish for 15 minutes to retain all the juices. Then slice and serve.
