Cajun Chicken

1 TBSP oil for cooking (olive or vegetable)

1 pound chicken (thighs or breast)

2 TBSP Spice by Rachel Sweet SLIGHTLY SPICY CAJUN MIX


Place your chicken on a plate and sprinkle 1 tablespoon of SLIGHTLY SPICY CAJUN MIX to the tops of the chicken pieces, then turn them all over and sprinkle the rest of the mix on the other side. Add your oil to a pan and turn to medium heat. Give a few seconds for the oil to warm up and then put your chicken in the pan. Cook both sides until no longer pink inside the thickest part of each piece. Serve over noodles or with a vegetable side dish.
