Cajun French Fries

2 potatoes (white, russet, or red)

1 TBSP oil (olive or vegetable)

2 tsp Spice by Rachel Sweet SLIGHTLY SPICY CAJUN MIX


Preheat the oven to 375 degrees F. Wash the potatoes and slice into fries. Do this by cutting the potato into quarters lengthwise and then slice each of the quarters thinly. The thinner the slices, the crispier the fries will be. Take care to try and make the fries all the same size so that they will cook evenly.


Put all the fries into a bowl and add the oil. Stir to mix until all potatoes are coated, using a spoon or spatula to unstick them from each other if necessary. Add the 2 tsp of SLIGHTLY SPICY CAJUN MIX and stir until evenly coated.


Lay the fries onto a cookie sheet so that they are not touching each other. They won't crisp wherever they are touching. Add parchment paper for easy cleanup, if you'd like. Bake for 15 minutes. Remove the fries from the oven and use a spatula to flip them over. Bake for an additional 15 minutes. Serve hot.
