Candied Carrots

6 to 8 carrots (or 1 bag baby carrots)

1/2 cup water

1 TBSP honey

1 tsp Spice by Rachel Sweet CHAI SPICES

Wash and slice the carrots or add the baby carrots to a small saucepan. Add the water and simmer 10 minutes or until all the water is evaporated.

Stir in the honey and the teaspoon of CHAI SPICES and shut off the heat. Stir until everything is well mixed and the carrots have a sticky candy-like coating. Serve hot as a side dish to ham or leafy greens.
