Cheesy Pasta

1 box pasta

1 TBSP oil (coconut, olive, or vegetable)

1 cup broth (vegetable or chicken) or water

2 TBSP Spice by Rachel Sweet BUTTERY AUTUMN MIX

1 onion

1 bell pepper (green, red, orange, or yellow)

1 bunch collard greens or spinach


Fill a pot with water and heat to boiling. While the water is heating, you can prepare your vegetables. When the water boils, add the entire box of pasta. Wash and slice the onion, pepper, and greens into strips (cutting into thin strips is called "julienne"). Add the oil into a second pot and heat to medium. Add the vegetables and cook for 5 minutes until browned. Add the broth and the 2 tablespoons of BUTTERY AUTUMN MIX and stir well. Turn the heat to low while the pasta finishes cooking.


When the pasta is cooked (you can take one out to test it to make sure), drain in a colander in the sink and add the pasta to the pot with the veggies. Stir well until the pasta is evenly coated.
