1/2 cup chia seeds
1 can coconut milk
1 apple (any flavor, but red ones work best here)
2 TBSP maple syrup
2 TBSP Spice by Rachel Sweet CHAI SPICES
shredded coconut, for topping
walnuts, for topping
Cut the apple into quarters and remove the core. No need to peel, just shred into a medium sized bowl using a cheese grater. Once all apple slices are shredded, add the chia seeds to the bowl. Shake the can of coconut milk well to mix. Then add the contents to the bowl. Stir in the maple syrup and the 2 tablespoons of CHAI SPICES and mix well.
Cover the bowl and let sit in the refrigerator for at least 2 hours. To serve, spoon some of the pudding into small bowls and top with shredded coconut and walnuts.
