1 chicken breast
1 pint grape tomatoes
1 ripe avocado
1 cup plain yogurt
Pita pockets
1 TBSP Spice by Rachel Sweet ONION SOUP MIX
Preheat your oven to 350 degrees F and put the chicken breast into a baking dish. Bake the chicken for 30 minutes until cooked through. While the chicken is cooking, wash the tomatoes and cut them in half. Put the tomato halves into a large bowl. Cut the avocado in half and remove the pit carefully using a knife or a spoon. Peel off the skin and dice the avocado into bite sized pieces. Add this to the bowl with the tomatoes. Scoop out the yogurt into the bowl and stir to mix until the veggies are coated.
When the chicken is done, cut it into bite sized pieces and add to the bowl with the rest of the ingredients. Add the tablespoon of ONION SOUP MIX and stir well. Cut a piece of pita bread in half using a pizza cutter for an even cut with no rips. Stuff each half of the pita with the mix and store the remaining mix in the refrigerator for later.
