Deconstructed Stuffed Peppers

1 cup rice

2 cups water or broth

1 pound ground beef or ground turkey

1 onion

1 pepper

1 can diced tomatoes (optional)

2 TBSP Spice by Rachel Sweet SWEET FENNEL MIX


In a pot add the cup of rice and the 2 cups water (or broth). Bring to a boil and then turn down to low heat and cook, covered, until all the liquid is absorbed.


Dice the onion and pepper in bite-sized pieces and set aside. In a large pan, add the ground beef and heat to medium. Use a silicon spatula to break it up as it cooks into bite-sized pieces. When the ground beef is no longer pink on the outside, add the onion, pepper, and 2 tablespoons of SWEET FENNEL MIX and cover the pan. Cook for 10 minutes covered, then take the cover off. Add the tomatoes, if using them. When the rice has finished cooking, add the rice to the pan and stir everything together.
