1/2 tsp Spice by Rachel Sweet SLIGHTLY SPICY CAJUN MIX
1 TBSP butter or oil (olive or vegetable)
Crack the eggs into a bowl carefully, keeping the yolks intact. Add the butter or oil to a small pan and heat on medium. Allow a minute for the butter to melt or for the oil to heat up, then pour the eggs into the pan. Sprinkle SLIGHTLY SPICY CAJUN MIX over them. Use a silicone or plastic spatula to separate the eggs once the whites have cooked. Shut off the heat and flip both eggs over to cook off the rest of the runny whites. Serve immediately. Enjoy!
