1 box pasta
2 chicken breasts
salt and pepper to taste
1/4 cup Warm Apple Vinaigrette (see recipe!)
4 plum tomatoes
8 ounces feta cheese
Fill a pot with water and heat to boiling. While the water is heating, cut the raw chicken into bite-sized pieces. Place these on a baking dish or cookie sheet. Put a piece of parchment paper down on the baking dish to make clean up easier, if desired. Sprinkle salt and pepper over the chicken pieces. Preheat the oven to 375 degrees and bake the chicken for 15 minutes.
When the pot of water boils, add the pasta and cook, stirring occasionally for 12 minutes. Drain the water from the pasta using a colander in the sink. Transfer the cooked pasta to a large bowl. Add the chicken to the bowl once it is finished cooking. Add the Warm Apple Vinaigrette dressing and stir to coat well.
Dice the tomatoes into bite-sized pieces and add to the bowl with the pasta and chicken. Do not add the feta until the pasta and chicken have cooled enough to not melt the feta. Mix well. Chill in the fridge 2 hours. Serve cold.
