Fennel Roasted Potatoes

2 large or 4 small potatoes (white, red, or russet work well)

1 TBSP oil (olive or vegetable)

1 TBSP Spice by Rachel Sweet SWEET FENNEL MIX

Preheat oven to 400 degrees F. Wash and slice your potatoes to 1/4 inch thickness (a quick guide is roughly twice the thickness of your knife blade!). Put the potato slices into a large bowl and add the oil. Stir to coat and then add the tablespoon of SWEET FENNEL MIX and stir until the potatoes are coated. put the potatoes in a glass baking dish or cookie sheet (line with parchment paper for easy cleanup!). It's okay if the potatoes are touching each other. Bake for 20 minutes then take the dish out and turn the slices over. Bake another 15 minutes until soft.
