Fennel Vegetable Soup

2 TBSP oil (olive, or vegetable)

1 onion

2 to 4 potatoes (white, russet, or red)

1 package frozen peas and carrots

2 TBSP Spice by Rachel Sweet SWEET FENNEL MIX

4 cups vegetable broth or water

1 bunch kale

Wash and chop the onion and the potatoes. Put the oil into a large pot, and turn to medium heat. Add the chopped onion and potatoes to the pot and allow to cook for 5 minutes.

While the onions and potatoes are cooking, wash the kale and tear bite sized pieces from the midrib. Set aside.

Add the broth, frozen veggies, and the 2 tablespoons of SWEET FENNEL MIX. Stir well and cover the pot. Once the liquid boils, turn to low heat and allow to cook for 15 minutes. Add the kale and cook 5 additional minutes. Serve piping hot.
