Gazpacho

8 tomatoes

3 limes

1 jalapeno (optional)

1 European cucumber

1 green pepper

1 small (or a quarter of a large) red onion

1 TBSP Spice by Rachel Sweet WARM CHILI MIX



Peel and dice the onion as small as possible, and place into a large bowl. Rinse and dice the green pepper and add to the bowl with the onion. Rinse the cucumber and Cut lengthwise into quarters, then dice and add to the bowl with the rest of the veggies.


In a blender, add the tablespoon of WARM CHILI MIX. Cut the stem off the jalapeno, if using, and cut lengthwise to scoop out the seeds. Add the jalapeno halves to the blender. Cut 3 of the tomatoes into quarters and add them to the blender. Cut the limes in half and then squeeze the juices into the blender. Blend until smooth, then pour it over the rest of the ingredients in the bowl. Finally, dice the 5 remaining tomatoes and add them to the bowl. Stir everything well to mix and let it sit at least 2 hours in the fridge prior to serving.


Serve as a refreshing cold soup on a hot day or as an appetizer.
