Granola

2 cups rolled oats

1/2 cup raw nuts and seeds (try pecans, walnuts, pepitas, sunflower seeds)

1/4 cup sliced or slivered almonds

1 tsp Spice by Rachel Sweet CHAI SPICES

1/4 cup melted coconut oil

1/4 cup maple syrup or honey

3 TBSP dried cranberries


Preheat the oven to 350 degrees F. Line a glass baking dish with parchment paper or spray with oil.


Combine the oats, nuts, seeds, and the teaspoon of CHAI SPICES in a large bowl and mix. Add in the oil and maple syrup (or honey) and mix well until everything is thoroughly coated. Pour the granola into the baking dish and spread it into an even layer. Bake for 20-25 minutes until lightly golden (it will further brown as it cools). Remove from the oven and allow 45 minutes to cool. Add in the dried cranberries and break the granola into pieces to your desired chunkiness. Use to top yogurt or try it on its own.
