Green Beans and Mushrooms Two Ways (Roasted)

2 TBSP oil (olive, coconut, or vegetable)

Frozen Green Beans

Sliced Mushrooms

1 TBSP Spice by Rachel Sweet COCONUT CURRY MIX


Preheat the oven to 400 degrees F. Rinse the mushrooms prior to cooking in a colander if desired. Add the beans (no need to thaw!) and the mushrooms to a large bowl. Add the oil and mix until the vegetables are coated. Add the tablespoon of COCONUT CURRY MIX and stir until evenly coated. Dump everything into a glass baking dish or cookie sheet. Add a sheet of parchment paper for easy cleanup, if desired. Roast in the oven for 20 minutes. Take the pan out and use a spatula to stir before returning to the oven. Cook for 15 more minutes.
