1 can chickpeas
1/4 cup olive oil
2 TBSP vinegar (apple cider, white wine, red wine)
1 red pepper
1 small red onion
2 TBSP Spice by Rachel Sweet BUTTERY AUTUMN MIX
Wraps, any size
Rinse the chickpeas in a colander and then add to a large bowl. Dice the cucumber, red pepper, and red onion into small pieces and add these to the bowl with the chickpeas. In a small bowl, add the olive oil, vinegar, and BUTTERY AUTUMN MIX and stir to mix. Pour this dressing into the bowl and stir to mix until the veggies are coated.
Lay a wrap on a plate and scoop some of the mix into the center of the wrap. Roll it up from the bottom and the sides. If pre-making these for lunches, keep the wrap separate from the mix so it doesn't get soggy.
