Healthy Oatmeal Mini Muffins

2 cups rolled oats

1 tsp baking powder

2 TBSP Spice by Rachel Sweet WALNUT DELIGHT MIX

3 TBSP sugar

2 eggs

3/4 cup milk

1/2 stick butter


In a large bowl, mix together the oats, baking powder, sugar, and the 2 tablespoons of WALNUT DELIGHT MIX. Stir well.


In a separate small bowl, crack the eggs and beat. Add the milk and stir. Melt the butter either in a microwave or in the stove. Add the butter and mix well. Pour this wet mix into the dry mix in the large bowl and stir well.


Preheat the oven to 350 degrees F. While the oven is heating, put small muffin cups into a mini muffin tray. Add the oats mixture as evenly as possible into each cup. Bake 15 minutes.
