5 to 8 medium potatoes (red, white, or russet)
1 large onion
1 large red bell pepper
1 TBSP Spice by Rachel Sweet SLIGHTLY SPICY CAJUN MIX
2 TBSP butter or oil (olive or vegetable)
Scrub the potatoes and poke several holes all around to let steam out. Place the potatoes into a pot and fill with water to cover all potatoes plus an extra inch of water on top of that. Heat to boiling, then allow to boil for 15 minutes. Shut off heat, drain, and set the potatoes aside.
Rinse the onion and pepper and dice. After the potatoes are cooled enough to touch, dice the potatoes and set aside. Heat the butter or oil on medium heat in a large pan or a pot. Add the peppers and onions and cook 5 minutes. Add the diced cooked potatoes and the tablespoon of SLIGHTLY SPICY CAJUN MIX and stir well. Cook an additional 5 minutes. Serve hot.
