1 can coconut milk
1 cup water (or broth)
2 TBSP Spice by Rachel Sweet MASALA MIX
Fill a pot with water and cook the rice noodles according to package instructions. Drain the water from the noodles and return the noodles to the pot. Add the can of coconut milk and the water (or broth). Add the 2 tablespoons of MASALA MIX and stir well. Heat on low until bubbling. Feel free to add additional vegetables or cubed cooked chicken or serve as is. Top with cilantro or parsley and serve with bread or naan for dipping. Enjoy!
