Maple Butternut Squash

1 butternut squash

1 red onion

2 TBSP maple syrup

2 TBSP olive oil

1 TBSP Spice by Rachel Sweet WARM CHILI MIX


Preheat the oven to 425 degrees F. While the oven is preheating, peel the squash and dice into 1 inch pieces. Peel the onion and cut into large pieces (cut it in half the long way and then cut each half into quarters).


Put the onion and squash into a large bowl and drizzle with the oil. Stir to coat everything and then add the tablespoon of WARM CHILI MIX. Stir to coat, and then drizzle with the maple syrup. Stir well and pour out the vegetables onto a glass baking dish or a cookie sheet. Line with a sheet of parchment paper for easy cleanup!


Bake in the preheated oven for 30 minutes. Serve as a side dish to meat or grains.
