1 can chickpeas
1 TBSP oil (coconut, olive, vegetable...)
1 TBSP Spice by Rachel Sweet MASALA MIX
Preheat oven to 450 degrees F. Rinse the chickpeas in a colander and add to a large bowl. Add the oil and mix until all chickpeas are coated well. Then add the tablespoon of MASALA MIX and stir. Lay parchment or wax paper on a baking dish or cookie sheet and spread the chickpeas so that they are in one even layer with none piled on top of each other. Bake for 15 minutes, then take them out and use a spoon or spatula to roll them around a bit on the baking sheet in order to toast the other side. Bake another 15 minutes. These are great as a hot snack or as an alternative to croutons or even to top a creamy bisque. Enjoy!
