Masala White Potatoes

6 to 8 white potatoes

1 small onion

1/2 cup plain yogurt

1 TBSP Spice by Rachel Sweet MASALA MIX

Wash and slice the potatoes (approximately1/4 inch thick). Add the slices to a large pot. Add about an inch of water to the pot. It does not need to completely cover the potatoes. Heat to boiling and then turn the heat down to the lowest setting. Cover, and simmer the potatoes for 10 minutes.

While the potatoes are cooking, wash and dice the onion. After the 10 minutes are up, remove the cover and add the onions and the tablespoon of MASALA MIX and turn the heat back up to medium. Cook for 10 more minutes and then shut the heat off. Stir in the yogurt and serve as a fantastic side dish to meat, lentils, and/or spinach.
