1 TBSP oil (olive or vegetable)
1 onion
1 pound chicken (breast or thigh meat)
1 can tomato paste or diced tomatoes
2 TBSP Spice by Rachel Sweet WARM CHILI MIX
1 can white beans (navy beans, cannelloni beans, or northern beans)
2 cups water or broth
1 bag frozen corn
1 bag frozen spinach
Chop the onion and set aside. Dice the chicken into bite sized pieces. Add the oil to a pot and turn heat to medium. Allow a minute for the oil to heat and then add the chicken. When the chicken has cooked on the outside so that no raw meat is showing, add the onion. Cook for 5 minutes, stirring as needed. Add the rest of the ingredients and turn the heat to low. Cover the pot and cook for 25 minutes.
