2 TBSP butter or oil (olive, or vegetable)
2 to 4 leeks (optional)
2 to 4 carrots
1 bunch celery
2 8oz packages sliced mushrooms
2 TBSP Spice by Rachel Sweet ONION SOUP MIX
6 cups vegetable broth or water
Wash and chop the onion, leeks, carrots and the celery. Put the butter into a large pot, and turn to medium heat. Add the chopped vegetables to the pot and allow to cook for 10 minutes.
While the other vegetables are cooking, wash the mushrooms in a colander to remove any dirt. Add these to the pot and cook an additional 5 minutes.
Add the broth or water and the 2 tablespoons of ONION SOUP MIX. Stir well and cover the pot. Once the liquid boils, turn to low heat and allow to cook for 30 minutes. Serve piping hot.
