Pumpkin Spice Pancakes (Gluten Free)

1 banana

2 eggs

1 TBSP butter or oil (olive or vegetable)

1 TBSP Spice by Rachel Sweet PUMPKIN SPICE MIX



Peel the banana and put it in a small bowl. Use a fork or a potato masher to mash the banana and then set the bowl aside. In another small bowl, crack the 2 eggs and use a fork or a whisk to beat. Add the eggs to the mashed banana and add the tablespoon of PUMPKIN SPICE MIX. Mix the batter well.


Add the butter or oil to a small pan and turn the heat to medium. When the butter has melted, add half the batter to the pan and let cook about 3 minutes, until the top of the pancake gets bubbly. Flip the pancake and cook an additional minute. Remove the first pancake and add a bit more oil or butter to the pan to grease before adding the rest of the batter for the second pancake. Cook this 3 minutes on the first side, then flip and cook for one more minute. Serve hot and topped with maple syrup, butter, powdered sugar, jam, or fruit.
