1 cup rice
2 cups broth or water
1 package frozen peas and carrots
1 cup sliced almonds (optional)
2 TBSP Spice by Rachel Sweet CHAI SPICES
Put the cup of rice, the 2 tablespoons of CHAI SPICES, and the 2 cups broth or water into a pot on the stove and stir to mix. Heat to boiling and then add the contents of the package of frozen vegetables. Turn the heat down to its lowest setting and cover. the pot Allow to cook on low for approximately 20 minutes. Keep an eye on it so it doesn't burn! When there is no liquid left in the pot it is done. Remove the cover and stir in the almonds, if using. Serve hot.
