2 red bell pepper
1/3 CUP olive oil
6 cloves garlic
2 TBSP Spice by Rachel Sweet SLIGHTLY SPICY CAJUN MIX
Move your oven rack to its highest position and preheat the broiler on your oven. While the oven preheats, wash the peppers and cut into quarters. Place the peppers skin side up in a baking dish or cookie sheet. Peel the skins from the garlic and add these to the dish with the pepper pieces. Broil in the oven for 5 to 7 minutes, until the skin of the peppers blisters and starts to char. Remove the peppers and garlic from the oven and set aside to cool.
Put the olive oil and the 2 tablespoons of SLIGHTLY SPICY CAJUN MIX into a blender. Add the roasted garlic and pepper and blend until smooth. Allow to cool in the refrigerator for one hour before serving. Serve with chips or veggie sticks for dipping.
