Steak Fajitas

1 pound steak (New York, skirt, or other cut)

1 lime

1 onion

1 bell pepper (any color)

2 TBSP oil (olive or vegetable)

2 TBSP Spice by Rachel Sweet SLIGHTLY SPICY CAJUN MIX

1 avocado

1 jar mild salsa



Cut the raw steak into strips about half inch wide and place into a large bowl. Squeeze the lime juice over the steak strips then sprinkle the 2 tablespoons of SLIGHTLY SPICY CAJUN MIX over the steaks and mix so that each strip has some of the spices on it.


Add 1 tablespoon of oil to a frying pan and heat to medium. Add the spiced steak and cook, stirring occasionally, until medium doneness (5 to 8 minutes of cook time). Cut one of the strips in half to check for doneness. When the steak is done, scoop out of the frying pan and into a separate bowl.


Wash and slice the onion and the pepper into thin strips. Cut the onion in half the long way and then slice into half moons. Add the rest of the oil into the frying pan and reheat to medium heat. Add the onions and peppers and cook 5 minutes.


Remove the pit and peel the avocado. Slice into strips and set aside. Place a tortilla on a plate and add the steak, peppers and onions, avocado, and top with a spoonful of salsa. Roll up to eat.
