Trail Mix (2 flavors)

1/4 cup raw sunflower seeds

1/2 cup sliced almonds

1/2 cup peanuts (roasted, unsalted)

1 cup walnuts

1/4 cup pepitas (optional)

1/2 cup dried cranberries or raisins

1 tsp oil (coconut, olive, or vegetable)

1 tsp maple syrup

1 TBSP Spice by Rachel Sweet SLIGHTLY SPICY CAJUN MIX

or

1 TBSP Spice by Rachel Sweet COCONUT CURRY MIX


Preheat the oven to 325 degrees F. In a large bowl, mix all the nuts together (do not add the cranberries or raisins yet!). Add the oil and the maple syrup and stir well to coat the nuts. Add either the SLIGHTLY SPICY CAJUN MIX or the COCONUT CURRY MIX and stir well.


Put parchment paper on a cookie sheet and spread the mix evenly. Bake 10 minutes in the oven, then take the tray out of the oven and mix the nuts around to cook on the other side. Return to the oven for another 5 minutes.


When the nuts are finished cooking, allow to cool then transfer to a bowl and add the cranberries or the raisins. Stir to mix.
