Baked Eggplant

1 Eggplant

1/4 cup oil (olive or vegetable)

1 TBSP Spice by Rachel Sweet COCONUT CURRY MIX

1/4 cup plain breadcrumbs

Preheat oven to 400 degrees F. Slice the eggplant into thin rounds and put them in a bowl. Add the olive oil and stir to mix. In a separate small bowl, mix together the breadcrumbs and the tablespoon of COCONUT CURRY MIX until the breadcrumbs are evenly spiced. Add the spiced breadcrumbs to the bowl with the eggplant and mix until evenly coated. Place the eggplant in a baking dish and bake for 30 minutes at 400 degrees F. Enjoy!
