Cranberry Bread

1/4 cup butter or coconut oil

2 cups flour (all purpose or wheat)

2 tsp baking powder

1/2 tsp salt

2 TBSP Spice by Rachel Sweet WALNUT DELIGHT MIX

1/2 cup sugar

1 cup whole cranberries

1 cup orange juice

1 egg


Preheat oven to 350 degrees F. You can put the butter into an oven safe dish to melt in the oven while it preheats or melt the butter in the microwave but be sure to keep an eye on it so it doesn't splatter! After the butter is melted, dip a paper towel into it and wipe the inside of a bread loaf pan to grease. Be sure to get the corners!


Mix the flour, baking powder, salt, and the 2 tablespoons of WALNUT DELIGHT MIX in a large bowl. Set this aside. Rinse the cranberries in a colander and remove any stray stems if necessary. Put the cranberries into the flour mixture bowl and stir until the berries are well coated.


In a separate small bowl, crack the egg and beat with a whisk or a fork. Add the orange juice, sugar, and butter and mix well. Add the contents of the bowl to the flour and cranberry mixture and mix. Put the dough mixture into the greased pan and bake in the preheated oven for 60 minutes. To check for doneness, insert a butter knife into the middle of the loaf. If it comes out clean, the bread is done. If there is wet dough sticking to it, allow to bake a little longer until the knife comes out clean.


Remove from the oven and allow to cool before slicing and serving.
