Fried Vegetables

1 large potato

1 head cauliflower

1 onion

1 cup flour

1 cup water

oil for frying

2 TBSP Spice by Rachel Sweet MASALA MIX

Cut the cauliflower into florets and set aside. Cut the potato (no need to peel!) in half the long way and then slice thinly into half moon shapes. Peel the onion and cut in half. Separate the layers of the two halves and set aside with the rest of the vegetables.

In a medium bowl, mix the flour and the 2 tablespoons of MASALA MIX together. Add the water and whisk until smooth.

Add enough oil to the bottom of a frying pan to completely cover the bottom. Heat to medium and allow to warm up for 1 minute. Meanwhile, dip the vegetables into the batter. Carefully place them into the hot oil (be careful of splatter). Cook 3 minutes on each side until soft in the middle. Line a plate with paper towels for the finished vegetables.

Continue cooking in batches, adding more oil as necessary, until all vegetables are cooked. Serve as an appetizer, snack, or side dish.

Enjoy!
