Sweet Potato Fries

3 large sweet potatoes

1/3 cup flour

2 TBSP oil (olive, coconut, or vegetable)

2 TBSP Spice by Rachel Sweet COCONUT CURRY MIX



Preheat oven to 450 degrees F. While the oven heats, cut the potatoes into fries. No need to peel! Cut the ends off first, then slice lengthwise. The thinner the fries, the crispier they will be. Put the fries into a large bowl as you cut them.


In a small bowl, mix the flour and the 2 tablespoon COCONUT CURRY MIX together. Set aside. When you have finished cutting up your fries, pour the oil over them and use a large spoon to mix them so that all fries are coated well in oil. Then sprinkle the entire bowl of spiced flour over them. Mix again and then pour the spiced fries onto a cookie sheet. Use two cookie sheets, if needed, to spread out the fries as much as possible. Try not to let them touch too much.


Bake for 25 minutes. Serve hot.
