Roasted Beets

2-3 bunches of beets, any color!

2 TBSP olive oil vanilla extract

1 TBSP Spice by Rachel Sweet ONION SOUP MIX

Preheat oven to 375 degrees F and line a baking sheet with parchment paper.

While the oven heats up, wash your beets. Scrub them with a brush to get all the dirt off. Then cut the leaves off. Set these aside and peel the skin off the beets with a vegetable peeler. Trim the top and root ends and then dice the peeled beets. Add these to a large bowl. Next, take the stems and leaves and cut into 1 1/2 long pieces. Add the stems and leaf pieces to the bowl with the diced beets. Pour the oil over the beet roots and stems and mix well using a large spoon. Sprinkle the tablepoon of ONION SOUP MIX over the beets and mix again until well coated. Dump everything out onto the baking sheet and spread as evenly as possible.

Bake 40 minutes in the heated oven or until the beets are soft and ooked through.
