Taste of Fall Vegetable Soup

8 cups water or broth

1 bag (2 TBSP) Spice by Rachel Sweet MULLING SPICES

1 bag frozen mixed vegetables (cauliflower, carrot, broccoli, green beans, corn, peas)

1 package sliced mushrooms

1 can red beans

1 bag frozen spinach

1 tsp salt (optional)

Bring the water or broth almost to a boil in a large stockpot. Add the bag of MULLING SPICES and submerge the bag so that the spices can flavor the soup. Add the frozen veggies and bring to a boil once again. Rinse the mushrooms and the beans in a colander and add to the soup pot. Cover and simmer 15 minutes.

Add the spinach and salt and simmer another 5 minutes. Remove the spice bag, squeeze out, and discard. Serve piping hot.
