Tzimmes

2 TBSP oil

1 onion

3 medium sweet potatoes

5 carrots

5 oz dried cranberries

8 oz pitted dates

1 cup orange juice

1 cup water

2 TBSP Spice by Rachel Sweet PUMPKIN PIE MIX



Peel and dice the onion and set aside. Dice the potatoes and slice the carrots. No need to peel! Set these aside separate from the onions. Add the oil to a large pot and heat to medium. Add the onions and cook 10 minutes. While the onions cook, slice the dates in half or remove the pits if not using pre-pitted dates.


Add the potatoes, carrots, cranberries, dates, orange juice, water, and the 2 tablespoon of PUMPKIN PIE MIX and mix the veggies until evenly coated. Heat to almost boiling. Then, cover and simmer 50 minutes until the potatoes are tender. Uncover the pot and simmer with the cover off for an additional 5 minutes to evaporate any remaining liquid. Serve this sticky sweet side dish to meat or grains.
