2 cups almond flour (fine ground, not coarse)
1 tsp baking powder
1 TBSP Spice by Rachel Sweet PUMPKIN SPICE MIX
1/4 cup butter
1/4 cup honey
1/4 cup water
Preheat the oven to 350 degrees F. In a microwave safe dish, melt the butter for a few seconds until soft.
In a large bowl, mix together the almond flour, baking powder, and the tablespoon of PUMPKIN SPICE MIX. In a separate small bowl, crack the eggs and whisk well. Add the honey, water, and melted butter and mix. Scrape the bottom of the bowl to incorporate all of the honey.
Add the wet ingredients to the flour mixture and stir until everything is well mixed. Place muffin papers in a mini muffin tray and scoop the batter into each. Bake 13 to 15 minutes until golden brown.
