Compote

1 or 2 bags frozen fruit (mixed berries, strawberries, mango, pineapple, cherries, blueberries, raspberries)

1 apple or pear (optional)

1 bag (2 TBSP) Spice by Rachel Sweet MULLING SPICES

water



Wash and chop the apple and/or pear if using. No need to peel them! Put them into a pot and add 2 TBSP water. These need to cook the longest so if you're using them in your compote then you will want to start them first. Turn the heat to the lowest setting and cook 10 minutes, stirring to make sure they don't burn.


If you are not using apples or pears in your compote, you can simply dump the contents of the frozen fruit bags into a pot and add enough water so that the bottom of the pot is covered. Add the MULLING SPICES bag and stir so that the bag is immersed in the liquid. Cover and then cook on the lowest heat setting for 10 minutes. Remove the cover and stir. If the compote looks a little too liquid-y, just let it cook another minute with the cover off so the extra liquid can evaporate. Serve warm or chilled. Try it on top of ice cream, in yogurt, as a topping for cheese or toast, or anything else you can think of!
