Pumpkin Bread

2 cups flour

1 tsp baking soda

1/2 tsp baking powder

1 1/2 sticks (3/4 cup) unsalted butter

1 1/2 cups sugar

2 large eggs

1 15-oz can 100% pure pumpkin

1 TBSP Spice by Rachel Sweet PUMPKIN PIE MIX

Preheat oven to 325 degrees F and grease a bread loaf pan or simply put a piece of parchment paper into it. In a medium bowl, combine the flour, baking soda, baking powder, and the tablespoon of PUMPKIN PIE MIX. Whisk until well combined and set aside.

Melt the butter in a microwave until almost melted. It's okay to have chunks of butter remaining. Add the butter to a large bowl. Add the sugar and use an electric mixer to beat the butter and sugar on medium speed until blended. Add the eggs one at a time, beating well after each addition. Beat in the pumpkin. Add the spiced flour mixture and mix until combined.

Scoop the batter into the bread pan and bake for 75 minutes. Insert a butter knife into the center of the bread to check for doneness. If it comes out clean or mostly clean, it's done! Let the loaf cool in the pan for about 10 minutes, then lift it out using the parchment paper underneath, or turn it out onto a wire rack to cool completely.
